ekko c0f1453c62 fix: graceful shutdown for nodemon restart to prevent EADDRINUSE ...

- Add unified shutdown handler for SIGUSR2/SIGINT/SIGTERM
- Add uncaughtException/unhandledRejection handlers
- Use --signal SIGTERM in nodemon config
