chore: 完善 Docker 部署目录结构与教程

- 新增 backend/logs/.gitkeep 和 backend/backups/.gitkeep 占位文件

- 调整 .gitignore 让 logs 和 backups 目录的 .gitkeep 能被追踪

- 教程更新：完整克隆项目时持久化目录已存在
